Three Tweet Recipe aka Fresh Berry Shortcake

@mapgirlsfc 1c AP flour/1.5T bking pwdr/1T sugar/2T cold butter/enuf milk to bind. Roll out 3/4″ thick, cut biscuits. Bake 10-15mins@450F. Cool&split

@mapgirlsfc 1pint berries/.25c sugar/.25c H2O/boil gently. 3T cold H2O/.2t cornstarch/2-3T sugar/stir & pour into pot. Mash fruit, boil till thick.

@mapgirlsfc Fork split cool biscuits. Stack: Bisc bottom, fresh berries, sauce, bisc top, sauce, whipped cream. Serve w/extra sauce. YUM.

Serves 4

Ingredients:
1c All Purpose flour
1.5T baking powder
1T sugar
2T cold butter
Couple ounces of cold milk
Dash of lemon juice
2 pints of fresh berries (1 pint for sauce, 1 for cakes)
1/4c sugar
1/4c water + 3T cold water
Pinch or two of cornstarch
1c heavy whipping cream
a few extra tablespoons of sugar
1t vanilla

So to clarify the steps:

Mix the flour, baking powder and sugar together. Cut in cold butter with a pastry cutter or two knives. Stir in some cold milk to combine them into a soft dough. Roll out to 3/4″ thick, and cut biscuits. (Should be enough to cut 3 and use scraps for 4th.)

Boil the berries till they give up their liquid. Add in a little bit of cornstarch dissolved in cold water to thicken the sauce. Add more sugar for sweeter sauce, if desired. Break up the fruit in the pot for a chunky sauce, or strain.

Whip the cream slightly, add in sugar and vanilla. Whip again till light and fluffy.

Fork split the biscuits so they retain tender insides. Top bottom half of biscuit with fruit and sauce.
Stack the top of the biscuit on with more fruit, sauce and add a dollop of whipped cream.

I have a fruit allergy, but cooked fruit is usually ok. I was able to eat this and it was delish! First fresh berries I’ve been able to eat in a long time.
