Sunday was rough. The Capitals lost to the Penguins in an overtime shootout. I certainly got my money’s worth on that game because it was really exciting. I almost had a No Spend Day. Since I bought my hockey tickets in advance, and loaded up my SmarTrip card a few weeks ago, I can sort of get away with calling my Sunday a No Spend Day.
Over the weekend, I bought a chicken for dinner. It was sort of expensive because we tried to get an ‘organic’ chicken. Saturday night was roasted chicken with thyme, instant mashed potatoes and some green beans. After that I was making chicken stock till 4am. (3am really but it was the Daylight Savings Time changeover.)
Sunday, I lacked mirepoix veggies, but I made some chicken noodle soup anyway. I had soaked a few white beans the night before and threw those into the pot as well.
I ate the soup before going to a hockey game and cut up chicken for salad. I also boiled down the chicken carcass a little more to make a little more stock and picked off the soft bits for boyfriend’s dog.
The plan for today was to bring my lunch of chicken salad with a mustard vinaigrette and buy a roll and some juice at the supermarket. I think there’s enough salad for two meals and some extra soup. But I left my lunch on a chair on my way out this morning. RATS. I was really looking forward to it too.
ps- For your hockey entertainment: Ovie sings the Eastern Motors jingle. ROFL. yeeeeeeah. I think he’s got what, $113 million in credit?

That’s great! We usually get the cheap frozen chicken. How was the organic stuff? It’s usually a bit more pricey.

That’s weird. I was up until the same time that same night making chicken. Insert Twilight Zone music here. I’ve been cooking much more often, since I’m home more and because I like my kitchen in this new place.
