I had forgotten its pleasures. To needle my friend, T, who thinks I should make more money and forget pinching my pennies, I will tell you about dinner on Monday night.
I went to the grocery store and spent $20 on food. I bought some microwavable soups for work because they were $1.25 each. I got a dark chocolate bar for my boss because we are always on the lookout for 70+% cacao chocolate bars. I bought a box of Lipton soup mix, fresh veggies and a roasted turkey breast.
I had initially thought I would buy a small roast to cook for dinner. I had a menu in mind when I was shopping so I didn’t over buy. I also took only a handbasket because that helps discipline my shopping trip to only what is necessary. Hence I passed up BOGO Coca-cola on that trip, making a mental note to go back and buy some later this week as well as more soups.
I cut up two potatoes and two small squash. The potatoes got roasted with the soup mix. I only used half an envelope since I can only cook half a Lipton soup mix recipe with the roasting pan I’ve got. I also can’t eat a full recipe in a week. I cut up the squash and boiled/steamed them lightly with a clove of garlic. I sliced up the turkey breast and placed one portion on my plate and boxed the rest.
Soup mix- $0.42
Squash – $0.84
Turkey – $1.91
Potato – $0.30$3.47 per meal

Soups are my favorite meals to make. They are economically, nutritious and they really help stretch those grocery dollars. Excellent way to save money and eat healthier. And thanks for the soup recipe too!
Oh Sue! That’s not a soup recipe. I used the soup mix to coat the potatoes for roasting.

Since you like soups, I recommend the Alessi brand soup mixes. Throw in some veggies and it is a great meal.
I make big amount of food on weekends. It’s fun and then dinners and lunches are ready for a week or more.
Another good soup is potato and bacon/cheese, then throw in some chickpeas and milk. Or you can take potato soup and add your own bacon or cheese as well. I used to go to a store which had a really good generic potato, bacon, cheese, so I wanted to be creative with it.
THANK you for posting this! I need step-by-step things like this to help me figure out how to make cheap meals. Grocery costs are huge for me. I’m going to buy these exact things soon!!
I love your posts about food! I bought a rotisserie chicken and made it last 5 meals for four of us: 2 adults and 2 kids. We had chicken sandwiches twice, a chicken casserole twice, and chicken with corn one night. And…it only cost $4.99 at Costco.
